Maple Cashew Coconut Granola Clusters

Growing up, I would always take the box of granola cereal and dig through it until I found the big chunky clusters. I'm sure my family was overjoyed to open the box and only find granola crumbs left...oops. Luckily, this granola recipe allows you to make those same granola clusters in the comfort of your own home, and it will make your kitchen smell amazing. If you've never made granola before, it's a simple process. You combine the oats and mix-ins (in this case coconut and cashews), and then mix liquid and spices into that. Once combined, you bake at a low temperature, stirring occasionally until the granola is cooked to perfection.

  • 3 cups old-fashioned oats
  • 1 cup flaked unsweetened coconut
  • 1 cup nuts (I used cashews)
  • 1/2-3/4 cup real maple syrup
  • 3 tbsp canola oil
  • pinch of salt
  • pinch of cinnamon and nutmeg
  • 1 egg white, whisked

Preheat oven to 300 degrees. Mix together oats, coconut, and nuts in a large bowl. Add in the maple syrup, oil, spices, and salt and mix together until evenly coated. Add in the egg white and spread mixture onto a baking sheet, lined with parchment. Bake for 45-60 minutes, turning once through. Halfway through the baking after you've stirred the granola, push the granola together into one large thin sheet, so that it will stick together and form those clusters. Let cool on the pan completely, and then break up the sheet of granola into chunks. Store in airtight container.
