These snacks taste really good, only have a few ingredients, and could not be more simple to make. They keep well, are easy to pack, and are a good source of energy, too.
They taste identical to larabars, but are much cheaper. With a few tweaks, you can also make endless variations by adding in other dried fruit or chocolate chips, or using different nuts/nut butters. The possibilities are endless!
Makes 8 bars
- 1 cup unsalted roasted cashews
- 8 oz (220 g) pitted dates
- 4 tbsp cocoa powder
- dash salt
- splash vanilla extract
Blend all ingredients together, using a food processor/magic bullet. Other blenders may also work. The mixture will look like a bunch of small crumbs, but it should stick together when pinched. If you need to add a tablespoon or two of water at this point, you can. Line a loaf pan with parchment, and press mixture into the bottom of the pan. Refrigerate for 15 minutes before cutting into 8 pieces. They will be sticky, so I find it easiest to wrap them individually at this point. Store in the fridge, wrapped, for up to a week. It’s possible they might last longer, but I’ve never gotten to that point. :) Enjoy!
