Want a super summery breakfast or snack that will make you feel like you’re on a tropical island? Here it is! The only semi-tricky part is chopping and scooping out the insides of the watermelon, and owning a blender. The rest is up to you and can be adapted based on what you like and what you have! For fruit, you can use fresh or frozen, on whatever variety you prefer. Below I list what I used, but it is all up to you!
Cut the watermelon in half and hollow out one of the halves. You will have an extra half of the watermelon to snack on afterward.
Chop up the watermelon that you’ve scooped out and throw it in the blender. Add the rest of your ingredients to the blender and blend.
Fill up the watermelon half and then top!
Makes 1 smoothie bowl (with leftover watermelon)
- 1 Personal watermelon
- about 3 oz Coconut water (or one quarter of small 11.1 oz bottle)
- 1/4 c Plain Greek Yogurt
- 1 cup frozen mixed fruit (I used strawberries, mango, and cherries)
- Toppings: Fresh Fruit, Granola Coconut, Honey, Chia seeds, etc.
To start off, grab your trusty cutting board and sharp knife. Slice the watermelon in half, so you have 2 bowl shaped pieces. Next, scoop out most of the inside of the fruit from one of the pieces, leaving some pink still in the bowl to snack on as you eat your smoothie. To scoop out, you can use a melon baller if you have one or just a normal spoon, which is what I used. Once your watermelon bowls are prepped, we make the smoothie! Throw in about half of the scooped watermelon, coconut water, greek yogurt, and frozen fruit. Blend until thoroughly mixed. If it seems too thick, add more coconut water or whatever you’re using for liquid. If your smoothie is too thin, then you can add more fruit to thicken it up. Once you’ve reached the desired consistency and flavor, fill up the watermelon bowl and add your toppings! Protip: Actually eating out of the watermelon can be tricky depending on the shape of the bottom of the bowl, so don’t feel bad if you just want a regular bowl. You might have extra smoothie left over that does not fit into the bowl, and you can always freeze it in a mason jar and save it for a quick breakfast later. Take a picture for your instagram and then go to town eating your smoothie bowl and daydream that you live on a warm tropical island somewhere.
