Some veggie burgers can be lacking in taste or texture, this one fortunately is not! Quick to throw together and great to freeze in advance, this recipe can help you with your healthy eating goals for the year. I like to serve mine with some sweet potato "fries" on the side, but any sides will do! If you have a can of black beans in your pantry, it's likely that you can throw this together. It also typically handles substitutions well in terms of spices/flavorings and other ingredients.
makes 4 veggie burger patties
- 1 can of black beans, rinsed and drained
- 1 tbsp tomato paste
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- dash of cumin, salt, and pepper
- 1/2 cup of breadcrumbs
- 1 egg
Start by heating up a skillet over medium heat, with a tablespoon or two of oil. In large bowl, place rinsed black beans. With a spoon, start to crush and mush the beans together. Some will stay whole, but you want most of them in a paste form. This may take a minute or two. Once beans are mashed, add in the rest of ingredients and mix together until fully combined. Using all of the mixture, form four patties. Put the patties in the pan, and cook for a few minutes on each side until lightly browned. That's it! Serve on a bun or with lettuce, however you prefer.
