Chocolate-Covered Strawberry Oatmeal

It seems silly to post a recipe for what amounts to fancy oatmeal, but sometimes you never know when that breakfast inspiration will strike. If there’s one thing I’m good at, it’s making any meal less healthy. With lots of flavor, this oatmeal CAN still be healthy (unless you smother it in maple syrup like I do). Add a little extra oomph to your morning routine and pretend you’re eating chocolate covered strawberries instead. This base chocolate oatmeal is ripe for adaptations. It's great with peanut butter and bananas, it would take well to almonds and coconut, so many choices!

Ingredients:

  • ½ cup oatmeal (I prefer old-fashioned oats, but quick or steel cut will still work)
  • 1 cup water
  • 1 tsp cocoa powder
  • Sliced strawberries

Optional:

  • Pinch of salt
  • Dash of vanilla extract
  • 1 tsp chia seeds
  • Maple syrup or brown sugar


Boil the water in a saucepan over medium heat. Add in oats and cocoa powder, and stir until combined. Continue to boil the oatmeal mixture until it reaches your desired consistency. Length of time will vary greatly on kind of oats, stovetop temperature, pan used, etc, but as a guide, mine takes about 5 minutes. Once perfect consistency is reached, take off of heat. Mix in any optional ingredients, and then top with fresh sliced strawberries. Enjoy hot!
