Summer Vegetable Panzanella

Panzanella is one of my favorite summer meals because it’s so easy to put together! All you need is bread and whatever fresh vegetables you have lying around. There’s no real recipe here, just a simple list of ingredients. You can use whatever ratios you want!

I used:

  • Cucumbers
  • Tomatoes
  • Grilled Peppers
  • Fresh Mozzarella
  • Bread Cubes drizzled with olive oil
  • Vinaigrette

How to assemble: Prep your vegetables (cooking if preferred) and chop up into equal sized pieces. Chop up cheese and bread cubes. Toast bread cubes with olive oil in the oven on a baking sheet, in a frying pan on the stove, or in a toaster oven. Once the bread is all crispy and warm, mix all ingredients together and top with your dressing of choice! I used a homemade vinaigrette; it had olive oil, wine vinegar, garlic, basil, honey, mustard, salt, and pepper. Make with whatever you have handy and enjoy!
